Ingredients
3 medium-size Potatoes
2 tsp Salt (10 g)
1 tsp Crushed Red Pepper (5 g)
2 tsp Mint (10 g)
For the Stuffing:
500 g Minced Veal
1 tsp Thyme (5 g)
1 tsp Powdered Red Pepper (5 g)
1 tsp Black Pepper (5 g)
2 tsp Salt (10 g)
1 Onion
2 Tbsp Vegetable oil (30 ml)
1 Tomato Puree
For the topping:
1 cup Yogurt (245 g)
1 clove of Garlic
3 Tbsp Butter (45 g)
1 tsp Crushed Red Pepper (5 g)
Directions
1- Chop the potatoes in small pieces and boil them.
2- Once they are poached, add the mint, crushed red pepper and salt to mash (puree) and leave to cool.
3- Put the oil and finely chopped onions in a pan and fry.
4- Add the minced meat and spices as you keep frying.
5- Add the tomato puree in and let the minced meat release its juice in low heat.
6- Put two thirds (2/3) of the cooled potato puree in a deep plate covered/wrapped with stretch film. Make the puree into a shape of the plate as you move pressing it down towards the edge.
7- Transfer the minced meat into the plate holding the potatoes and cover it with the remaining potato puree.
8- Grate the garlic into the yogurt and fry the crushed red pepper in butter in a separate pan.
9- Turn the plate of mashed potatoes into a flat serving plate and remove the stretch film, then pour the yoghurt first, followed by the butter.
