Ingredients for Lentil Patties
1 cup Red Lentils (190 g)
1 + ½ cups Fine Bulgur (170 g)
1 medium size Onion
½ bunch of Parsley
1 bunch of Spring Onions
1 clove of Garlic
1 tablespoon of Tomato Paste (8 g)
1 tablespoon of Pepper (Paprika) Paste (8 g)
½ cup Olive oil (120 ml)
4 cups of Water (960 ml)
Salt, Cumin, Black pepper, Red pepper
Directions
1- Put the lentils in a pot along with 4 cups of water and boil until soft.
2- Once boiled, take the lentils in a mixing bowl together with the remaining water and add the thin bulgur in and cover it with stretch film and leave it to rest for 40 minutes.
3- Add the onion and garlic into the oil in a pan and stir fry; add the tomato paste as you keep on frying.
4- Once fried, add the fried onion and paste sauce into the lentil and keep mixing. Add the spices and work it by hand thoroughly.
5- Add the parsley and green onions and continue working.
6- Once the lentils are cooled down a little bit, take egg-size lumps from the lentil mix an shape it into a patty, and serve on lettuce or rocket.
