Ingredients for Hunter Pastry
4 pieces of Dough Sheets
300 g of Minced Meat
3 small-size Onions
100 g (1 cup) of Chopped Walnuts
60 g (1/2 cup) Fine Bulgur
1 tsp Salt
1 tsp Black pepper
1 tsp Powdered Red pepper
1 tsp Cumin
For stuffing:
240 ml (1 cup) of Water
240 ml (1 cup) of Vegetable oil
For the topping:
1 Egg
Bread Crumbs
Directions
1- Stir fry the onion with a little bit of oil until it changes colour.
2- Then, add in the minced meat and continue frying. In the meantime, you can add some more oil, if needed.
3- Dip the bulgur with hot water, make sure the water level is 1 cm above the bulgur.
4- Once you have fried the minced meat and onion, add the wetted bulgur, salt and spices and keep stirring for another 1-2 minutes, then turn off the heat. (if you wish, you can add some tomato paste in the stuffing with minced meat)
5- Mix the water and oil.
6- Spread a dough sheet and rub it all over with this mixture.
7- Put a second dough sheet over it.
8- Put more mixture again and cut the dough sheet into 8 equal parts.
9- In the meantime, add the walnut into the meat-stuffing once it has cooled down.
10- Place some minced meat along the long sides and fold the edges over.
11- Follow the same procedures for the other two dough sheets.
12- Crack an egg into the mixture of water and oil and whisk it.
13- Dip the pastries into this liquid mixture first, then into the bread crumbs; then put them on the baking sheet.
14- Bake until golden brown in the oven preheated to 190 °C / 375 °F.
15- Serve while hot.
