Soup with Bulgur Patties – Get the recipe: See description below
Ingredients
1 cup of Yoghurt (245 g)
3 Tbsp of Flour (30 g)
1 Egg Yolk
1 tsp of Salt (5 g)
4+½ cups of Water (1 L.)
For the patties:
½ cup of Fine Bulgur (80 g)
2 Tbsp of Flour (20 g)
½ cup of Hot Water (120 ml)
1 tsp of Salt (5 g)
For the topping:
3 Tbsp of Butter (45 g)
1 tsp of Chili Pepper (5 g)
2 tsp of Dried Mint (10 g)
Directions
1- To prepare the patties; pour boiling water on top of the fine bulgur.
2- When the bulgur absorbs the water a bit, add the flour and salt and work the mix by hand.
3- Pick small pieces of the mix and roll them in your hands by wetting your hands every now and then.
4- Put the egg yolk, yoghurt and flour in a cup and mix thoroughly
5- Pour 4 + ½ cups of water in the pot you’ll use to make the soup and add the yoghurt you have just whisked and put it on the stove.
6- Continue stirring until it boils so that water blends thoroughly yoghurt and the soup does curdle.
7- Add the bulgur patties and salt into the boiling water. Cook for another 10 minutes.
8- Melt the butter in a small pan, add the mint and chili pepper and fry them.
9- Pour the prepared butter all over the soup.
