A great Cyprus Cake from Mediterranean cuisine.

Ingredients for Cyprus Cake

3 Eggs
100 gr (½ c.) Sugar
100 ml (½ c.) Vegetable oil
120 gr (1 c.) Breadcrumbs
90 gr (⅞ c.) crushed Walnut
45 gr (¾ c.) grated Coconut
1 package of Baking powder (11 g = 1 tbsp)

For the cream:
1lt (32 fl. oz.) Milk
120 gr (1 c.) Corn starch
100 gr (½ c.) Sugar
1 package Vanilla (8 g = 2 tsp)
75 gr (⅔ c.) Wipping cream powder

For the syrup/sorbet:
350 ml (1½ c. ) Water
260 gr (1⅓ c.) Sugar
1 package Vanilla (8 g = 2 tsp)

Directions

1- Preheat the oven 160 degrees C / 320 degrees F
2- Heat the water and stir in the sugar
3- Boil for 15 min and add the vanilla
4- Let it cool down
5- Beat the eggs and the sugar
6- Add rest of the ingredients for the cake
7- Mix all
8- Pour into a well-greased pan/tray
9- Bake for 30 minutes
10- Pour the syrup onto the cake and let it cool down
11- Stir in the milk, the starch, the sugar, the vanilla
12- Cook over medium heat until it gets thick slightly
13- Remove from heat, add wipping cream powder
14- Blend together for 5 minutes
15- Pour onto the cake
16- Sprinkle grated coconut
17- Refrigerate for 3 hours
