Ingredients
6 Phyllo doughs
1 cup Milk (240 ml)
1 cup Vegetable oil (240 ml)
For the inner part:
250 g Minced Meat
¼ cup Vegetable oil (60 ml)
1 Onion
1 Tomato
1 tsp Tomato paste (28 gr)
¼ bunch of Parsley
1 tsp Salt
1 tsp Black pepper
1 tsp Chili pepper
2 Eggplants
For the top:
1 Egg yolk
For the top decoration:
Tomato
Green pepper
Instructions
Peel the 2 eggplants evenly in stripes on four sides. Cut into small cubes. And, fry them in hot oil. (Once fried, the eggplants will get rid of the excess oil if they are placed on paper towel/ napkin.)
For the stuffing; chop up the onions finely; add the minced meat when the onions turn pink. Then, add the tomato paste, diced tomatoes, finely chopped parsley and spices one by one and finish off the frying process.
Open up the phyllo pastry on top of each other and cut them uniformly into 8 triangular shapes. Pick them up three by three and put plenty of the mixture of milk and oil generously in between them. Fold the edges over and tuck the tip inside to put it into the shape of a plate.
Pour the stir fried eggplant at the bottom of the formed pastry and top it with the minced meat mixture. Put pepper and tomato on top for decoration.
Rub egg yolk around the edges; put it into the oven heated at 190 degrees and bake until the top is golden brown.
