Ingredients for Tres Leches Cake
Units: metric (US)
For the cake:
5 eggs
¾ cup sugar – 170g
1.2 cup flour – 150g
1 package baking powder (11 g) (2 Tsp)
1 package vanilla (8 g) (2 tsp)
For the milk sauce:
3.5 cup milk – 875g
4 tbsp sugar – 50g
200g heavy cream
For the glaze:
1/2 cup sugar – 90g
2.5 tbsp butter – 35g
200g cooking cream
For the frosting (whipped cream):
1 cup cold milk (240 ml)
1 package Whipping cream powder
Directions
- Preheat oven to 170°C (340 °F). Line AxA cm (BxB inch) cake pan with baking paper.
- The cake:
(a) Add 5 eggs and sugar into a mixing bowl and whisk until creamy.
(b) Add 1.5 cups flour, baking powder and vanilla powder and mix with a spatula. Pour the batter onto a tray lined with baking paper.
(c) Bake for 10 min, and then, let it cool down to 150°C (300 °F) and bake for an additional 30 min. - The milk sauce: In a proper bowl, stir in cup milk, sugar and heavy cream and put the mixture in the fridge.
- The frosting (whipped cream): Whip whipping cream powder and milk with a hand mixer until the whipped cream gets firm and holds its own shape.
- The caramel glaze:
(a) pour sugar into a pan and stir continuously over medium heat until it melts and turns light brown
(b) add butter and stir until the butter melts.
(c) Finally, stir in heavy cooking and mix well over low heat until the mixture is smooth. - Turn the warm cake upside down and peel the baking paper. Pierce the top of the cake with a fork or sharp object.
- Pour the cold milk sauce on the cake.
- Set aside some whipped cream for decoration and spread the remaining over the cake.
- Pour the cold caramel glaze over the whipped cream.
- Decorate with the whipped cream set aside.
- Refrigerate for 5-6 hours before serving.
