Ingredients for Orange Cheesecake

For the crust:
100 g (3 oz) Sweet crackers
100 g (1/2 cup) Butter
100 g (2/3 cup) Hazelnuts

For the filling:
600 g (2 ½ cup) Cream cheese
200 ml (3/4 cup) Heavy cream
50 g (7 tbsp) Corn starch
100 g (1/2 cup) White sugar
3 Eggs

For the glaze:
480 ml (2 cups) Orange juice
50 g (7 tbsp) Corn starch
65 g (5 tbsp) White sugar

Directions

Blend the nuts and crackers to a fine powder. Melt the butter and add in to the mixture. Pour the mix into a 26 cm (10 inch) springform pan and press gently. Chill the mixture in the fridge for about 30 minutes.

Mix the cream cheese and sugar with a wire beater. Add the heavy cream and corn starch. Add the eggs only one at a time while whisking. Pour the batter into the chilled cake pan and bake 90 minutes at 320 F / 160 C (preheated) until the top of the cheesecake is lightly browned.

Expert tip
Open the oven door slightly and let the cheesecake cool down to room temperature on the oven rack.
Mix the orange juice, corn starch and sugar in a pot. Bring the mix to a boil, stirring constantly. Turn the heat off and let the glaze cool a few minutes. Pour the glaze onto the cheesecake.

Chill the cheesecake overnight in the fridge before serving.
